So, after coming to the US for my higher studies, I was really excited to try out new flavors and combinations in my recipes. One such gem that I discovered was the Chipotle peppers in Adobo sauce. Immense in flavor, a tablespoon of this as marination for chicken/pork is enough to make your mouth water. Part of many of my dishes and my signature chicken avocado tacos (soon to come), here is my recipe for Pan fried Chipotle chicken thighs!

Chipotle sliced chicken thighs served on sautéed french beans and freshly sliced avocados
INGREDIENTS:
Chicken thighs-2
French beans-1cup
Avocado-1
Chipotle peppers in adobo sauce-2tbsps
Garlic powder-1tbsp
Onion powder-1tsp
Salt
Pepper
Nutmeg-1tsp
Oil
PREPARATION:
1)In a bowl, add the chipotle peppers in adobo sauce, garlic powder, onion powder, salt, pepper and nutmeg. Seal the bowl with a lid or aluminium foil and marinate the chicken overnight.
2)Then the next day, heat up a pan with some oil. Once the pan is hot, fry the chicken thighs on the pan and cook for about 6 to 7 minutes on each side.
3)Once the chicken is done, add some butter on the same pan and add the french beans to the pan to cook in the butter and the chicken spices. Cook for about 15 minutes on medium. Mix in between.
4)Serve as shown with some fresh slices of avocado. Enjoy! 🙂
