So this is my first post on WordPress (yeah I know…about time!) and I wanted it to be one of my most flavorful recipes, so I chose one that reminds me of my hometown and native place Cochin, Kerala. This recipe can be made with beef or chicken as well. With pork being really popular in Texas, I went with it and safe to say, I wasn’t disappointed. Pork(boneless) – 350gm
Red chili powder-2tsps
Ginger garlic paste-1.5tbsps
Coconut flakes-1/2 cup
1)In a bowl, add ginger garlic paste, salt, pepper, coriander powder, turmeric powder, garam masala, a spoon of oil, red chili powder and mix well. Then add the pork to this and coat the pork with the marinade/masala well. Marinate for about 6 hours or overnight.
2)Then on a pan after heating it with oil, add some fennel, mustard and cumin seeds. Sauté for a couple of minutes till the spices become darker and are cooked.
3)Then add some finely chopped garlic cloves, curry leaves, chopped green chilies, red chilies and sauté well till the garlic turns golden brown and the chilies start to blister.
4)Now add the marinated pork to the mixture and mix well such that the pork mixes well with the previously sautéed spices. Then after a few minutes, add coconut flakes to the pork mixture and mix well.
5)Cook at medium flame for about 20 to 30 minutes and stir the pork mixture in between, ensuring the spices are flavors are evenly distributed. Serve as shown with some red onions and green chili. Enjoy! 🙂
