Basil Pesto Chicken

This is one of the easiest and most pocket friendly recipes on my website. Everyone thinks a jar of basil pesto is costly and not worth it. Fortunately, you can get a jar of basil pesto for a dollar at your local dollar store. It is not as good as freshly made basil pesto with fresh basil leaves and pine nuts, but it is still a delicious flavor to add to pasta, chicken and other ingredients. The protein for this recipe as seen in the picture is a chicken leg quarter which is one of the cheapest cuts of chicken. You can get a 10 pound bag for less than 5 dollars at most grocery stores. Pablano peppers and carrots are the veggies that are paired with the chicken after a quick saute with the remaining oils of the chicken and with some other spices. A perfect recipe for those busy days and light on your budget as well.

Basil pesto chicken quarter with carrots and peppers

INGREDIENTS:
Chicken leg quarter-1
Basil pesto paste-1.5tbsps
Carrots-1
Pablano peppers-1
Red wine vinegar-1tsp
Red chili flakes-1tbsp
Minced garlic – 1tbsp
Salt
Pepper
Oil

PREPARATION:
1)Firstly, score the chicken by creating 2 to 3 slits with a sharp knife on both sides. In a bowl, add the chicken quarter along with some salt, pepper and season it. Let it rest for 15 minutes.
2)Then rub the basil pesto paste to the chicken carefully making sure it reaches the entire quarter.
3)Heat up a pan with some oil. Add the chicken to the pan and cook for about 40 minutes on medium heat or until brown, crispy and done. Flip at the halfway mark.
4)Then on another pan, heat up some oil. Add the minced garlic and red chili flakes. Once golden brown, add some chopped up carrots and sliced peppers to the mixture. Add some salt and red wine vinegar as well. Sauté for about 10 minutes. Serve as shown with the chicken. Enjoy! 🙂

  4. Wow, talk about an explosion of flavors! I’m wondering how either lemon zest, or grated fresh ginger would go with the the veggies? No matter, sounds delicious as is!

    If you grow your own basil, the homemade pesto gets cheaper. Pine nuts are still pricey, but you can actually make pesto using almost any nut. Pesto Genovese uses walnuts, which are much less expensive if you really want to be able to have the fresh and keep it cheap!
