Broccoli,Mushrooms & Tomatoes

Broccoli and Mushrooms are probably 2 of the tastiest vegetarian options out there. As a meat lover, there are few vegetables that can take the place of meat. These two fit the bill and when paired with juicy tomatoes for that tangy flavor, it becomes a beautiful dish, one I would maybe even choose over a meat based dish. So, like most of us, I wanted to eat more veg based dishes. Don’t get me wrong, I eat a lot of raw veggies like carrots, cucumbers and lettuce, but there’s always a protein with it which leans towards the non vegetarian aspect of food. Even broccoli, mushrooms and tomato for that matter, are great when paired with chicken, beef , pork etc. So, combining these veggies together with spices and herbs like rosemary, red chili flakes and fresh garlic can make a wholesome, tasty meal which can be eaten on their own as part of a low or no carbs diet, or with some flatbread or steamed rice.

{Recipe}
Broccoli, Mushrooms and Tomato Sauté

INGREDIENTS:
Mushrooms-1 cup fresh mushrooms
Broccoli- About 20 fresh florets
Tomato-2
Red wine vinegar-1tbsp
Minced garlic-2tsps
Butter-1tbsp
Salt
Pepper
Red chili flakes-1tbsp Dried Rosemary-1tbsp
Oil

PREPARATION:
1)In a pan, heat up some oil. Then add the red chili flakes and minced garlic and sauté till golden brown. Then add dried rosemary and cook for another minute, all on medium heat.
2)Now add the broccoli florets and cook for 10 minutes. Add some salt, pepper and red wine vinegar. Mix well.
3)Now add the fresh mushrooms as well along with some butter to help in the cooking and to add flavor. Cook for another 5 to 10 minutes.
4)Finally add some sliced tomatoes to the pan and sauté for 5 minutes on medium to high heat till the tomatoes are wilted. Serve as shown. Enjoy! 🙂
