Egg & Kale Cheese Sandwiches

Everyone loves cheese sandwiches! This is an upgrade to your traditional ones, and with minimal effort! This sandwich also adds your much needed proteins from the eggs and the iron from the kale. It’s an all round sandwich and is loaded with flavor and deliciousness. The fresh rosemary provides the fragrance, the hatch chiles provide the kick and the bit of heat that pairs well with that melted cheese. I used sourdough bread, but you could use rye bread or any other supermarket sliced bread., just ensure it’s nicely toasted in butter! Also, ensure to finely chop the kale and the sun dried tomatoes so that they cook evenly and provide equal flavor in every bite of your sandwich! Happy Cooking Guys! 🙂

{Recipe}
Pan fried egg,, kale and sun-dried tomatoes and cheese stuffed in toasted sourdough bread

INGREDIENTS:
Sourdough bread slices-3
Eggs-3
Sun dried tomatoes-5
Lacinato kale-1 or 2 (you can use any other fresh kale, just slice them finely)
Hatch chiles-1/2
Shredded Mozarella cheese – 1/2 cup
Salt
Pepper
Complete seasoning powder-1tsp(optional)
Rosemary – 1 sprig
Garlic powder-1tsp
Garlic butter – 2tbsps
Sriracha mayo
Olive oil

PREPARATION:
1)Finely chop up the kale, hatch chile and the sun dried tomatoes. On a pan, heat up some olive oil. Add the chopped up hatch chile and rosemary leaves. Sauté well for a couple of minutes.
2)Now, add the chopped up kale and sun dried tomatoes along with salt, pepper, complete seasoning, garlic powder and mix well. Sauté till the mixture is crispy and cooked.
3)Then keep the sautéed kale mixture aside in a bowl. On the same pan, add some oil. On medium heat, Then add your eggs to the pan, spread then with your spatulla till the egg (yolk and albumen) are evenly spread. Cook for about 2-3 minutes such that they are just cooked and fluffy.
4)Now remove the eggs from the pan and keep aside. Then toast your bread (all 3 slices) on the pan with garlic butter till golden brown. Season your bread with some salt flakes while doing so. Now keep your bread aside and take the shredded cheese and spread them across the pan for about 20 seconds or till melted.
5)Layer up your sandwich, starting off with a slice of bread, sriracha mayo, egg, melted cheese, slice of bread, sriracha mayo, sautéed crisp kale and sun dried tomatoes, cheese and finally, the last slice of bread. Cut into triangles and serve as shown! Enjoy! 🙂
