Paneer or cottage cheese, used mostly in sub continental dishes are a great source of protein and a delicious vegetarian option. It can be stir fried, used in curries or mounted on skewers and grilled to perfection. This is a quick assembly of ingredients to produce a delicious dish. Cold pressed Olive oil is a great topping with Arabic bread and compliments the fresh mint leaves and cheese well as well.Β It can be rolled into a sandwich and eaten as well, as I did.
