Sweet n Sour Pork Belly

So, this is my first time trying my hand at one of the cheaper, yet so delicious cuts of pork- the pork belly. Safe to say, it turned out to be a great success and a recipe I wrote down, immediately after making it. There is sweetness from the duck sauce, onions and sugar and that compliments the heat from the chili flakes and pepper along with the acidity of the fish sauce. This is a great recipe which can be made for lunch or dinner and goes great with some steamed white rice or soft bread.

{Recipe}
Fried sweet and sour pork belly

INGREDIENTS:
Pork belly- 500 gms
Onion-1
Minced garlic-1tbsp
Garlic powder-1tsp
Ginger-1tsp
Sugar-1tsp
Salt
Pepper
Red chili flakes-2tsps
Duck sauce – 2tsps
Fish sauce-1tsp
Red wine vinegar – 1tbsp
Cilantro

PREPARATION:
1)Cut the long strip of pork belly into small chunks. Season with salt, pepper, garlic powder and a little red chili flakes and marinate for an hour.
2)Meanwhile, slice up some onions. Add some minced garlic and red chili flakes with a little oil to a pan. Sauté till the garlic turns golden, then add the onions and sweat them till they are translucent.
3)Then add some salt, sugar, red wine vinegar and fish sauce. Mix well for about 5 minutes. Then keep the onion mixture aside.
4)On the same pan, add the marinated pork belly chunks skin side down first. Don’t add any oil, as the fat from the belly will give you a rich pork lard anyway. Fry the pork belly chunks till they are brown on all sides. Drain any excess oil and save it for other dishes later.
5)Add the onions to the pork on the pan and mix well. Have a little taste and add anything that you feel is missing. Serve as shown with some chopped up cilantro. Enjoy! 🙂
