Sautéed flavorful plantain bits in plantain skins and served with a spicy yoghurt dip
INGREDIENTS:
Plantains-1.5
Onion-1/2
Salt
Pepper
Minced garlic-1tbsp
Lime juice – 1tsp
Red chili flakes-1tbsp
Fennel seeds-1tsp
Coriander seeds-1tsp
Mustard seeds-1tsp
Cumin seeds-1tsp
Coriander leaves
Coconut Oil
PREPARATION:
1)Peel the skin off the plantain gently. Then cut the plantain into small cubes. Heat up some coconut oil on the pan.
2)Then add the fennel seeds, coriander seeds, mustard seeds, red chili flakes, cumin seeds and let it brown for a few minutes.
3)Then add the minced garlic to the pan and sauté and cook for a bit till the garlic bits become brown as well. Now add the plantain cubes. Add salt, pepper and lime juice.
4)After cooking for about 20-25 minutes or till it is not too hard anymore and neither too soft.,add the finely chopped onions cook for another 5 minutes. Served as shown. Enjoy!
