Beetroot is one of the most healthiest vegetables out there and the pink color it bleeds to dishes is a pretty sight. This recipe is one for the health conscious people but at the same time ensuring that taste and flavor are not compromised. Peas and corn add to the different colors in this dish. The beauty of this dish is that it can be eaten on it’s own or with some curry or fried eggs as an add on.
Beetroot and veggies rice
Ginger – 1tbsp
Red chili flakes-2tbsps
Red wine vinegar – 1tbsp
Lemon pepper seasoning-1tbsp
1)In a rice cooker, add 1 cup of water for 1/2 cup of rice. Once cooked, keep the rice aside.
2)Cut the beetroot into small pieces. Then in a saucepan, add the minced garlic, minced ginger, red chili flakes and sauté for a few minutes.
3)Now add the cut up beetroot and also add salt, pepper, cayenne pepper, lemon pepper and red wine vinegar and sauté on the pan till the beetroot is softer and cooked for about 15 minutes on medium heat. Keep sautéing in between.
4)Now add the peas and corn to the mixture in the saucepan. Sauté well for another 10 minutes. Now add the rice as well to this mixture and mix well. Add any other spices if required according to your taste. Serve as shown. Enjoy! 🙂
