Healthy, Healthy Healthy! Many people are watching their weight and what they eat these days. It’s always difficult to combine healthy and tasty in a dish. This recipe does just that and it’s a great side dish to some flatbread or plain steamed rice. Plantains, while being starchy are a great source of fiber and some vitamins and minerals. In Kerala, during the Onam Sadya, there is a plantain thoran(veg sauté with coconut and spices) every single time, and is relished by the locals. Well, this doesn’t use any of those spices or flavors but is still delicious. The collard greens help to add some color and enhance the iron and healthiness in the dish!
{Recipe}
Sautéed plantains and collard greens with fried dried red chilies
INGREDIENTS:
Plantains-1
Dried red chillies-7
Collard greens-1 bowl
Salt
Pepper
Garlic powder-1tbsp
Onion powder-1tsp
Lime juice-1tbsp
Coconut Oil
PREPARATION:
1)Chop the whole plantain into small cubes. Season with salt and pepper.
2)Then on a hot pan, heat up some coconut oil. Add the whole dried red chilies and sauté them till they blister. Add the chopped up seasoned plantain pieces along with garlic powder, onion powder and lime juice.
3)After cooking/sauteing for about 15 minutes or until a bit more golden in color on medium to high heat, chop up some collard greens and add it to the pan. Now mix and sauté for another 10 minutes on medium. Serve as shown. Enjoy! 🙂
