It’s summer time and this extremely easy blend of blueberries, ricotta cheese and sugar is an absolute treat to escape the heat! Blueberries are great antioxidants and a source of Vitamin K along its numerous health benefits. While fresh blueberries are expensive, the frozen ones are pretty cheap. Granted, that fresh is always better and no nutrients are lost, but a dollar for a pound of blueberries, that’s a a good deal. This mix is thick and is best eaten with a spoon. Also, in this quick blend, I have used a pound of frozen blueberries, about half a pound of ricotta cheese, some water and some sugar. Adjust the quantities according to your taste and have a great summer!
