Eggs- Sunny side up!

How do you like your eggs? I LOVE all forms of egg, be it fried, baked, poached, boiled (soft or hard), omelette, scrambled or plain sunny side up as displayed in this post.  Eggs are one of the most versatile ingredients and are used in various sweet and savory dishes. It’s my go-to ingredient on a lazy day or when I’m too tired to cook. Another great thing about eggs are that even though it’s traditionally a breakfast dish, it can be eaten for any meal of the day. Growing up, I ate eggs quite frequently, especially Sunday mornings in India, before church, would always be  2 sunny side up eggs with toasted bread and butter. Ah, those memories of childhood! There’s probably one person I know, who is crazier for eggs than me, and that’s my cousin sister who probably had a soft boiled egg instead of milk as an infant! So, this post shows a triple sunny side up egg or Bulls-Eye as it used to be called in our family. I have topped it with salt, pepper, red chili flakes, italian seasoning of thyme, basil and oregano and some feta cheese to give it that little bit of richness. Pair it with some toasted and buttered rye bread and you’re good to go! Delicious food in about 10 minutes! This post is a throwback to a fond staple of mine, even now and the simplicity in it is what stands out.

  5. I always ate only scrambled eggs growing up in the South. My Yankee husband slowly changed me into eating eggs sunny side up like him.
