Cauli Rice & Pork

Over the last few years, cauliflower rice has become a new trend and a healthier alternative as compared to actual rice which is rich in carbohydrates and starch. It’s also seen as a smarter way to feed your kids their daily dose of veggies. So this week, I decided to try it out and what better to pair it with than some lovely and juicy flavorful pan fried breaded pork. I used frozen cauliflower rice but you can make it from scratch by grating cauliflower florets into tiny pieces and then sauteing and seasoning with some salt & pepper. Accompanied with a fresh squeeze of lime, this dish is an easy and quick path to deliciousness and satisfaction to those cravings.

Cauliflower Rice and Pork

INGREDIENTS:
Cauliflower Rice – 400gms
Boneless pork meat-250gms
Rice flour-2tbsps
Curry powder-1tbsp
Garlic powder-1tbsp
Salt
Pepper
Red wine vinegar-1tbsp
Meat masala powder-1tbsp
Red chili flakes-1tbsp
Fresh parsley leaves
Oil

PREPARATION:
1)In a bowl add the curry powder, rice flour, garlic powder, meat masala powder and salt. Mix well. Then add the pork pieces to the bowl and coat well.
2)Keep the coated pork in another bowl. Keep it in the fridge for 10 minutes to allow it to harden.
3)Then on a pan heat up some oil and then add the pork pieces and fry them till they are crisp on the outside and juicy and tender on the inside. I fried it for about 10 minutes on medium to high heat and sautéed with a spatula at the halfway mark.
4)On the same pan, add some more oil if required. Add the cauliflower rice to the pan along with some salt, pepper and red chili flakes.
5)Sauté for a few minutes. Then add some red wine vinegar and sauté for another 5 minutes at medium heat, till cooked. Serve as shown with some fresh parsley on top. Enjoy! 🙂
