Hummus is something which reminds me of my Birthplace – Kuwait. That smooth creamy paste/ dip of chickpeas, tahini and garlic is a perfect add on for chicken, veggies, meat or any other savory entrée. The dip is so good that it can be eaten with just some pita bread and the combo is still amazing. Growing up, I used to slather hummus on everything. Initially, we used to buy it from the stores, but after realizing how easy it is to make it, there’s been no looking back. This recipe is made with roasted red bell peppers to give it a bit of earthiness along with the heroes of the dish – the chickpeas and tahini sauce. A dash of olive oil at the top just brings the dip to life.
{Recipe}
Spicy Roasted chickpeas and red bell pepper garlic dip(hummus)
INGREDIENTS:
Chickpeas-3/4 of a can
Minced garlic – 2tbsps
Red bell pepper-2
Salt
Tahini-1/4 cup
Lime juice-3tbsps
Red chillies-7
Vegetable broth-1/4 cup
Oil
PREPARATION:
1)In a pan, add some oil, minced garlic and red chilies. Sauté till the garlic becomes golden brown.
2)Then add some sliced red bell peppers and chickpeas from the can. Fry and sauté them for 10 minutes.
3)Then in a blender, add some vegetable broth and then add the mixture from the pan. Blend to a fine smooth paste /dip.
4)Add more of the broth accordingly to get required consistency. Serve as showed with some oil in top. Enjoy! 🙂
